TONY PARKIN

Having fallen in love with cooking at a young age, Tony trained under John Campbell at The Vineyard in Stockwell, where Nathan Outlaw was head chef, before taking a year away from the kitchen to work as a private chef for the Bamford family. Travelling extensively with them, Tony also helped develop the award-winning gastropub The Wild Rabbit in Oxfordshire.

Tony then worked at two internationally acclaimed restaurants, Noma and Kommandanten, before returning to the UK and gaining experience at Restaurant Gordon Ramsay, Northcote Manor, Restaurant Adam Simmonds and The West House.

His first role as Chef Patron came at The Tudor Room in Berkshire, where he earned a Michelin Star within four months. He later moved to Ireland as Head Chef at Cliff House Hotel, achieving another Michelin Star during his two-year tenure.

In 2025, Tony returned to the UK to be closer to his family and began searching, alongside his wife Laura, for the right place to create something of their own. In spring 2026, that vision became reality with the opening of Daise Restaurant, named in honour of Tony’s daughter.

For Tony, it marks a new chapter - a restaurant of his own, shaped by years of experience and built on his own terms.
